Berry Avocado Quinoa and Kale Salad with Honey-Lime Poppy Seed Dressing

Ingredients

Dressing

  • 1/4 cup olive oil
  • 1/4 cup canola oil
  • 1 tsp lime zest
  • 3 1/2 Tbsp fresh lime juice
  • 2 1/2 Tbsp honey
  • 1 tsp dijon mustard
  • 1/4 tsp salt
  • 2 tsp poppy seeds

Salad

  • 2 cups cooked quinoa (about 2/3 cup dry)
  • 1 cup sliced almonds, toasted
  • 9 oz baby kale or baby spinach
  • 1 1/2 cups fresh blueberries
  • 1 1/2 cups fresh raspberries
  • 2 medium avocados, peeled, cored and diced
  • 5 oz feta cheese, crumbled

Yield: About 5 – 6 servings

Directions

In a blender or mason jar combine all dressing ingredients except poppy seeds. Blend until well combined (or cover and shake if using a mason jar). Pour into a container and stir in poppy seeds. Store in refrigerator.

For the salad toss all ingredients together in a large salad bowl. Pour dressing over top and toss. Serve immediately after adding dressing.

Lemon Ricotta Parmesan Pasta with Spinach and Grilled Chicken

Ingredients

  • 1 lb grilled chicken breasts, sliced into strips*
  • 1 lb dry linguine, fettucine or spaghetti
  • Salt and freshly ground black pepper
  • 1 cup reserved pasta water
  • 6 oz fresh baby spinach, steamed just until beginning to wilt
  • 2 Tbsp extra virgin olive oil
  • 1 1/2 tsp lemon zest
  • 2 Tbsp lemon juice
  • 1 1/2 cups part skim ricotta
  • 1/2 cup finely shredded parmesan, plus more for serving

Yield: About 5 – 6 servings

Directions

Cook pasta in salted water according to directions listed on package, reserve 1 cup pasta water before draining pasta.

Drain water (reserve 1 cup) and return pasta to pot. Set pot over medium-low heat and add olive oil, lemon zest, lemon juice, ricotta, 1/2 cup hot reserved pasta water and parmesan and toss to evenly coat. Add in more pasta water as desired to thin and season with salt and pepper to taste, cook and toss, about 2 minutes, until ricotta is heated through. Toss in spinach and grilled chicken. Serve warm topped with more parmesan if desired.

*I recommend brushing the chicken lightly with olive oil and season both sides salt, pepper and garlic powder before grilling.

The Best Chicken Parmesan

Ingredients

Marinara Sauce

  • 2 Tbsp extra virgin olive oil
  • 1/4 cup finely chopped yellow onion
  • 2 garlic cloves, minced
  • salt and freshly ground black pepper
  • 1 tsp dried parsley
  • 1/4 tsp dried oregano
  • 1 pinch red pepper flakes
  • 1 (28 oz) can crushed Roma tomatoes (I prefer Contadina)
  • 1/4 tsp granulated sugar
  • 1 bay leaf
  • 2 Tbsp chopped fresh basil

Chicken

  • 2 (8 oz) boneless, skinless chicken breasts, trimmed, halved horizontally*, and pounded to 1/2-inch thick
  • salt
  • 2 oz whole-milk mozzarella cheese, shredded (1/2 cup)
  • 2 oz provolone cheese, shredded (1/2 cup) (I just bought a very thick slice from the deli counter, then grated it)
  • 1 large egg
  • 1 Tbsp all-purpose flour
  • 1 1/2 oz Parmesan cheese, grated (1/2 cup)
  • 1/2 cup Panko bread crumbs
  • 1/2 tsp garlic powder
  • 1/4 tsp dried oregano
  • 1/4 tsp freshly ground black pepper
  • 2 1/2 Tbsp vegetable oil
  • 2 1/2 Tbsp extra virgin olive oil
  • 1/4 cup torn fresh basil

Directions

For the sauce:

Heat 2 Tbsp olive oil in a medium saucepan over medium-high heat. Once hot add in onions and saute for 1 1/2 minutes then add garlic, 1/4 tsp salt, parsley, oregano and red pepper flakes and saute 30 seconds longer. Stir in crushed tomatoes, sugar, bay leaf and 2 Tbsp fresh basil, then add additional salt if desired and season with pepper to taste. Bring mixture to a simmer then reduce heat to medium-low and allow to simmer 20 minutes, stirring occasionally, until thickened. Remove from heat and cover saucepan with lid.

For the chicken:

While sauce is simmering, sprinkle each side of the chicken cutlet lightly with salt (about 1/16 tsp per each side), let stand at room temperature 20 minutes. Combine Mozzarella and Provolone cheese in a bowl, set aside. Adjust oven rack 4-inches from broiler element and preheat broiler.

In a shallow dish, whisk together flour and egg until smooth. In a separate shallow dish, toss together Parmesan cheese, Panko bread crumbs, garlic powder, oregano and 1/4 tsp pepper. Pat chicken dry with paper towels. Working with 1 chicken cutlet at a time, dredge chicken in egg mixture coating both sides and allowing excess to run off, then immediately transfer to Parmesan mixture and coat both sides with mixture, while pressing gently to allow crumbs to adhere. Transfer chicken to a plate and repeat process with remaining chicken cutlets. Pour 2 1/2 Tbsp olive oil and vegetable oil into a 10-inch non-stick skillet and heat over medium-high heat. Once oil is hot, add 2 coated chicken cutlets and fry without moving them until bottom is crispy and golden brown, about 1 1/2 – 2 minutes, then using metal tongs rotate to opposite side and cook until golden brown, about 1 1/2 – 2 minutes longer. Transfer fried chicken to a large plate lined with paper towels to drain. Repeat process with remaining 2 pieces of chicken.

Place cutlets on rimmed baking sheet and sprinkle Mozzarella cheese mixture evenly over cutlets. Broil in oven until cheese is melted and beginning to brown, about 3 – 4 minutes (keep a close eye on it, make sure internal temp of chicken reaches 165 degrees). Remove from oven and cover each cutlet with 2 Tbsp marinara sauce. Sprinkle tops evenly with remaining 1/4 cup fresh basil and serve immediately, adding additional sauce while enjoying, as desired.

*freeze chicken breasts for 15 minutes to help slice easier, then lye breast flat and trim into two pieces through the thickness of the breast.

Winter Fruit Salad with Lemon Poppy Seed Dressing

Ingredients

Dressing

  • 1/4 cup olive oil
  • 1/4 cup vegetable oil
  • 3 Tbsp granulated sugar
  • 3 Tbsp honey
  • 3 Tbsp fresh lemon juice
  • 2 tsp poppy seeds

Salad

  • 8 mandarine oranges, peeled and segmented
  • 4 apples (preferably 2 gala and 2 golden delicious)
  • 4 ripe kiwis peeled and diced
  • 4 bananas, peeled and diced
  • 1 1/2 cup pomegranate arils (from about 1 large)

Directions

For the dressing:

In a mixing bowl whisk together olive oil, vegetable oil, granulated sugar, honey and lemon juice until sugar has dissolved. Stir in poppy seeds.

For the fruit salad:

In a salad bowl toss together all of the fruit then pour dressing over top and gently toss to coat. Serve immediately for best results.

Overeating may be controllable, but it’s unavoidable. Even if you’re the most disciplined person in the world, there will always come a time when you just want to surrender yourself to it. What you do after that is what will matter most.

For instance, if you overeat, feel guilty about it, and do it again – well, this is a dead end to your weight loss goals. On the other hand, if you do something about it, like to give more time to work out, or detox yourself, then that’s a good thing. Again, it’s always in your hands.

brain aneurysm is a weak balloon-like spot on the wall of a brain artery. One in 50 people in the United States alone will develop this during their lifetime. This is approximately 6 million people, and the majority of them are aged 40 to 60 years old. It is also reported that most of them are women.

Liver Cells Grown in the Lab

What Causes a Food Coma?

Food coma, scientifically known as postprandial somnolence, is that drowsiness you feel right after you eat. Other symptoms include sleepiness, laziness, bloating, gas, mental fogginess, and even regret. The struggle is real, right?

It doesn’t always depend on how much you eat, sometimes it’s about what you eat. If you eat sugary and processed foods, you’re really likely to feel more lethargic.

So what causes food coma is the bacteria in your gut. It’s very common during the holidays, but there are ways you can avoid it, though.

For instance, you can have a small snack before going to parties where you know you might overindulge. Better yet, aim to eat small meals every three to four hours, instead of the usual three meals a day. Choosing small portions and eating slowly will also help you.

And of course, even though it’s a physiological phenomena, you can always fight it. Get up and do the dishes or go for a walk after eating.

Mini Pumpkin Pie Tarts with a Sunflower Cookie Crust (Nut-free, Vegan)

A couple weeks ago, I received a reader recipe request. Let’s call him “Jason”. Jason asked if I could create a nut-free version of my Raw Pumpkin-Maple Pie with a Baked Oat Crust (found in my cookbook, page 247) because his wife can’t have cashews and pecans. Apparently, it was tormenting her not to be able to try this pie! He wants to surprise her next month with this dessert as a special thank you because “she’s the best wife and mom ever”.

He went on to write, “Angela, I have no clue where to begin and don’t want to mess this up like I usually do.”

I immediately knew that I had to step up to the (pie) plate on this one (no pressure, no pressure!) because the world needs more love. And pie. Plus, I’ve always wondered how I could make this recipe without pecans or cashews, and now I have a nice option to share with you all. I tested multiple fillings and there was a clear winner that I’m sharing below. Spoiler alert – a combo of super luxurious full-fat coconut cream and sunflower seed butter worked so well as a replacement for cashews! It tastes so awesome.

I also paired it with a new toasted sunflower seed and oat “cookie” crust that’s a wonderful, crunchy compliment to the creamy and cool pumpkin pie filling. Pie crusts should never be boring or flavourless, and I love that this one is an easy “press-in” crust.

I meant to have this recipe up on Monday, but I ended up testing this pie about 7 times this week! I can’t sleep at night unless I’ve tested all of my options. Better late than never, I say. I’d rather not rush a recipe just to get it out on time. Anyway, I made this pie as a contribution to our Thanksgiving dinner later today (we’re in the US currently), and I’m so looking forward to the spread at my mom and stepdad’s. I hope those of you celebrating have a happy, fun, and safe Thanksgiving! And if you can’t make this pie today or this weekend, I hope you’ll include it on your holiday baking list.

Mini Pumpkin Pie Tarts with a Sunflower Cookie Crust (Nut-free)

Vegan, gluten-free, nut-free, refined sugar-free, soy-free

This is a luxurious and creamy nut-free version of my favourite Raw Pumpkin Pie from The Oh She Glows Cookbook. After many trials, I ended up using a combination of sunflower seed butter and full-fat coconut cream to replace the cashews in the original recipe, and it worked out so well! The pie has a light coconut flavour, but it's balanced out nicely by the earthy sunflower seed butter. As a bonus, this filling doesn’t use any whole nuts or whole seeds so you don’t need a Vitamix (or other high powdered blender) to get the filling super smooth. I used 4 tart-sized (about 4-inches diametre) "freestanding" baking cups which I found at Target, but you can also use a standard muffin tin lined with paper liners (or simply greased well) to make mini tarts. I'd imagine a 7-9 inch springform cake pan would work well too. The dough is a bit difficult to shape into a traditional pie crust (with high sides) so that's why I went with a flat crust for this recipe. If you don't mind fiddly things, then by all means take a stab at the regular pie crust. Also, the paper liners are easily removed if you remove them while the pies are frozen.

Ingredients:

For the crust:
  • 1/2 cup raw sunflower seeds
  • 1 3/4 cups rolled oats (use certified gluten-free if necessary)
  • 1/4 teaspoon fine sea salt
  • 1/4 cup coconut oil, melted*
  • 3 tablespoons pure maple syrup
  • 2 tablespoons smooth sunflower seed butter (pour off oil before measuring)
  • 2-3 teaspoons water, if needed to bind dough
For the filling:
  • 1/2 cup canned full-fat coconut cream**
  • 1 cup unsweetened pumpkin puree
  • 3/4 cup pure maple syrup
  • 1/2 cup coconut oil, melted*
  • 2 tablespoons + 2 teaspoons sunflower seed butter
  • 2 teaspoons pure vanilla extract
  • 1-2 teaspoons pumpkin pie spice, to taste***
  • 1/4 teaspoon fine sea salt
For serving:
  • Coconut Whipped Cream (I used So Delicious Coco Whip here)

Directions:

  1. Preheat oven to 350F. Grab four (4-inch diameter) baking paper cups, or 12 standard muffin paper liners and set aside. You can also use a 7-9 inch springform cake pan greased and lined with a circle of parchment paper.
  2. Add the sunflower seeds into a skillet and toast the seeds over medium heat for 5-8 minutes, until lightly golden and fragrant. Remove from heat.
  3. For the crust: Add the toasted sunflower seeds, oats, and salt into a food processor and process until finely chopped, resembling a coarse flour. Now, add the melted oil, maple syrup, and sunflower seed butter, and process until the mixture comes together into a heavy dough. The dough should stick together when pressed between your fingers very easily. If it's still a tad too dry, add the optional water and process again until it comes together. I find that I always need 2 teaspoons of water, but it'll depend on your ingredient's moisture content.
  4. Divide the dough equally between the liners, crumbling it all over each base. (Note: I reserved about 1/2 cup of the dough for sprinkling on the pies when serving.) Lightly wet your fingers. Starting at the centre, press the dough into the base to form a crust. If the dough starts to stick to your hands at any time, lightly wet your hands and shake off the excess water. Once the crust is all pressed in, poke the base with a fork about 2-3 times to allow the air to escape while baking. I place the 4 liners onto a baking sheet so it's easy to remove them from the oven.
  5. Bake the crusts for around 10-12 minutes until lightly golden around the edges. Place baking sheet on a cooling rack and cool the crusts for at least 15-20 minutes, or longer if you have the time.
  6. For the filling: Open the chilled can of coconut milk. Scoop off 1/2 cup of the white coconut cream only (not the water) and place it into a blender. (You can save the remaining contents of the can for a smoothie or other use.) Add the pumpkin puree, maple syrup, melted oil, sunflower seed butter, vanilla, pumpkin pie spice (to taste, I use 2 tsp), and salt. Blend, starting at a low speed and increasing the speed, until smooth.
  7. Divide the filling equally among the cooled crusts. Carefully, transfer the baking sheet (or muffin tin, if making 12 mini tarts) into the freezer on a flat surface. Chill until firm, about 3-5 hours. There's no need to cover it.
  8. After the tarts are solid, carefully remove the paper liners. Here you can transfer the pies to the fridge for a mousse-like texture, but I prefer the texture when frozen after sitting on the counter for 5-10 minutes before serving.
  9. Serve with coconut whipped cream on top, if desired. This pie filling softens a great deal at room temperature, so it's best not to leave leftovers on the counter. Return them to the fridge or freezer for best results.

Tips:

*A note about coconut: Health Canada classifies coconut as a "seed of a fruit" and not as a tree nut, however the U.S. FDA classifies coconut as a tree nut, so as you can see there is some confusion over classification when it comes to coconut. As always, if you think you might be allergic to coconut, be sure to talk to your doctor before consuming.

If you want to minimize the light coconut flavour in this pie, you can use refined (flavourless) coconut oil here rather than virgin.

**Be sure to chill a can of full-fat coconut milk for at least 24 hours before you begin this recipe. When ready, open the can and carefully scoop out 1/2 cup of the white coconut cream making sure not to use any of the coconut water.

***I used 2 teaspoons of Whole Food's 365 Pumpkin Pie Spice since I'm currently away from home. You can also try my homemade Pumpkin Pie Spice Mix.

One Pan Chicken Parmesan and Roasted Zucchini

Ingredients

  • 4 (6 oz) boneless skinless chicken breast halves
  • 3/4 cup Italian seasoned Panko bread crumbs
  • 1/4 cup finely grated Parmesan cheese
  • Salt and freshly ground black pepper
  • 1 large egg
  • 2 Tbsp olive oil, divided
  • 2/3 cup marinara sauce (from a jar of store bought)
  • 2/3 cup shredded mozzarella cheese
  • 1 1/4 lbs zucchini chopped in half through the length then sliced into 1/2-inch thick pieces
  • 1/2 tsp garlic powder
  • Chopped fresh basil, for serving (optional)

Directions

Preheat oven to 450 degrees. Spray a rimmed cookie sheet with non-stick cooking spray.

Pour Panko bread crumbs and parmesan into a gallon size resealable bag. Season with salt and pepper if desired. Shake bag then drizzle 1 Tbsp olive oil over bread crumb mixture. Seal bag and shake while pressing against mixture to evenly moisten crumbs. In a shallow dish whisk egg until well blended. Working with one chicken breast at a time, dredge chicken in egg then immediately transfer to bread crumb mixture and press both sides in crumbs to adhere well. Transfer to middle of baking dish then repeat with remaining chicken breasts. Bake chicken in oven 15 minutes. During last few minutes of chicken baking, place zucchini in a gallon size resealable bag, pour in olive oil and add garlic powder. Season wtih salt and pepper to taste. Seal bag and shake to evenly coat.

Remove chicken from oven, rotate chicken to opposite side. Add zucchini around chicken in an even layer. Return to oven and bake 10 minutes longer or until chicken registers 165 degrees in center on an instant read thermometer (mine were 170 after the 10 minutes so unless your chicken breasts are super thick you shouldn’t need much more time).

Remove from oven and spread marinara sauce down middle of chicken breasts, sprinkle with mozzarella. Move oven rack near broiler element and heat oven to broil. Broil until cheese has melted about 1 – 2 minutes (keep a close eye on it so cheese doesn’t burn).

Sprinkle with basil and serve immediately.

Honey Roasted Carrots

Ingredients

  • 3 lbs carrots, peeled and sliced on a bias to 1 1/2-inch long pieces (slice thicker portions into halves)*
  • 3 Tbsp olive oil
  • Salt and freshly ground black pepper
  • 3 Tbsp honey
  • 1 1/2 Tbsp apple cider vinegar
  • 2 1/2 Tbsp chopped fresh parsley
  • 1 Tbsp fresh thyme leaves

Directions

Preheat oven to 400 degrees. Place carrots in a mound on a 17 by 12-inch rimmed baking sheet. Drizzle with olive oil and season with salt and pepper and toss to evenly coat. Spread into an even layer. Roast in preheated oven 20 minutes then remove from oven. In a small bowl stir together honey and apple cider vinegar. Drizzle carrots with honey mixture and toss well to evenly coat. Return to oven and roast about 10 to 20 minutes longer. Remove from oven, toss again and sprinkle with fresh parsley and thyme. Serve warm.

*Thicker carrots are preferred. If thin reduce roasting time as needed.

Researchers Explain How Loneliness Can Be Deadly

Loneliness is that feeling of emptiness and isolation inside of you. It may be because you literally don’t have any friends or family, but it’s not limited to that. It can also be a feeling of being alone, even when you’re surrounded with people. So even if you’re the most cheerful person on the planet, it’s possible for you to feel it.

Basically, it’s like you’re separated from the world in the most unpleasant way. We’ve all felt that at some point in our lives, and it’s not a very nice feeling.

We’ve all felt isolated at times, but the so-called “invisible epidemic” that is loneliness is about much more than ephemeral feelings of sadness. Doctors have known for some time that loneliness is associated with not only chronic illness but death, too. Now, scientists are beginning to unravel why this is, with the discovery that social isolation puts our body in “fight or flight” mode, preparing for social threat. This triggers a cascade of events that ultimately alter the production of white blood cells, leaving us vulnerable to disease. Read more…

So it’s true how loneliness can be deadly by causing inflammation, which then makes your body prone to chronic diseases such as cancers, heart diseases and more. I guess it’s not just a metaphorical phrase when Britney Spears said “my loneliness is killing me” in her hit song in the 90s.

Aside from that, it can also be a cause of suicide. This is very alarming because it’s more prominent in young people around 18 to 34 years old.

A study in the journal Perspectives on Psychological Science earlier this year reported that it can be the next big public health issue, along with obesity and addiction, as it increases risk of death by up to 26 percent.

What can you do about it? Make friends, find a new hobby, write in a journal, eat – there are so many ways! Don’t be afraid to open yourself to people.  Just take the initiative. Remember, no man is an island. You can’t get stuck in your loneliness forever, it’ll literally kill you!

Coca-Cola’s Top Scientist is Stepping Down

Numerous reports about Coca-Cola were out this year, and they’re mostly bad news. We’ve heard about how it can cause sugar spikes, increase in blood pressure, feelings of sluggishness and irritability, for an hour after one simple sip. Even how one drink daily increases your risk of heart attack, stroke, obesity, diabetes, even certain types of cancers.

So first, the researchers from the University of Colorado returned the money, now the Coca-Cola’s top scientist is stepping down. What’s going to happen next in this big company? I guess the soda industry is indeed dying.

Fizzy drinks such as Coke are all chemicals and has zero nutritional content. In fact, an average Coke in-can contains 150 calories and 10 teaspoons of sugar. True, it may make you feel the ‘rush,’ which makes you feel like you’re high, but it basically does nothing but harm your body.

Why not try drinking green smoothies or those that were made from whole foods such as lemon or lime juice? There are so many healthier alternatives to kick your soda habit! Once you’re used to these, soft drinks will taste like rust.

Is Coffee Harmless or Harmful?

Just last week, a study justified the positive effects of coffee. It was called a “life-saver” as it helps reduce your risk of heart diseases, diabetes and dementia. It can also improve your overall athletic performance as it provides you with an instant boost in energy.

But seems like some researchers still doubt it. This latest report from Peter Whoriskey of Washington Post says that coffee can be harmless or harmful, depending on your body’s reaction to it:

So there, just like any food you consume, coffee can be harmless or harmful too. It makes sense since some people are having palpitations after just a cup, while some are perfectly fine.

What you can do is to observe your body’s reaction, and know your limits. If you feel like it’s doing more harm than good, then better quit it. If not, you can have up to five cups a day. Just be sure it’s the pure one, not the processed with added sugar and other harmful additives.

You may also want to avoid drinking it, or other caffeinated drink at night, unless you’re pulling an all-nighter.
